I have made it through the holidays with maintaining below my LIW and enjoyed the holidays! it did not bother me what others were eating or not eating! It did not bother me if they said something about what I was eating or not eating!! I start tomorrow as Week 4 Day 1 to add back sugars and carbs!! So I did my measurements today! The ohter reason I did them today is because when I first went on maintenance I could not were a pair of my "SKINNY" jeans, but at the last minute I need a clean pair of jeans on Christmas Eve and I said what the heck I will try???!!!!......I could pull them up when I started maintenance but there was no zipping or buttoning them!! BUT on Christmas Eve not only did I button and zip them I rode in the car with them on for 6 hours WOOT WOOT!!!

I am also glad to tell you since maintenance I have shed another 11.5 inches!!! so after you stop HCG your body keeps changing!!!

The Eggplant ~ Veggie ~ Meat Lasagne

When I returned home after a week in Maryland, I discovered that there were a lot of veggies in the fridge that needed to be used asap. Half a red onion, the rest of a bag of spinach, some roasted red peppers, a container of portabella mushrooms, half a container of ricotta, and an eggplant. There was only one option - lasagne! Eggplant is a very good facsimile for lasagne noodles, and I slice them very thinly with my mandolin. You can basically add whatever veggies you like, and sautee them in a pan. Also, you don't have to use meat in this, but I always do.



1 eggplant, peeled and very thinly sliced (I really prefer baby eggplants, about 3 or 4)

1 lb ground beef

4-5 cloves garlic, minced

1 pint mushrooms, sliced

handful spinach

1 medium onion, diced

2 roasted peppers* ( I omitted this did not have it here)

1/2 large container of ricotta

3 cups parmesan to sprinkle

1 jar no-sugar-added marinara* ( Be sure to check your carbs on this if in the first 3 weeks of Maintenance)



Brown meat, add onions and garlic and cook until translucent. Add mushrooms, brown for 3 minutes, then add peppers and spinach. Salt and pepper to taste. Add jar of marinara. Stir in ricotta.



Layer a large baking pan with eggplant slices. Top with sauce, then sprinkle parmesan. Repeat layers, and sprinkle generously with parm. Bake at 350 for 45-55 minutes, let rest for 10 minutes.

Well  a lot of things have been going on!! Over the weekend we found out my husband no longer had a job, he has completed his school and was doing his externship. They keep telling them upon completing that they would have full-time jobs offered, well that did not happen. So I have been busy getting him back to the town we are living in....sending resumes and saying prayers. I can truly say HCG has changed my life as well as my dependency on food! In my past I would have ate and drank my way through these times!!! I have keep my head high and stayed with the plan!!

A few days if you follow my Fitday Fitness journal you will see not a whole days food on it!! I made an Eggplant Lasgne Casserole a fellow blogger had posted and dont know how to convert it over to a serving. I can proudly report even though it had beef in it and it is usually not my friend I had a lose after eating it!! YEAH ME!!

I am going to post the recipe on in my next posting today! I will make some changes next time I make it but over all very good!!!

I promise to stay on top on my postings just with the hectic life at home and the holidays once you get behind it is hard to keep up!!!

I hope everyone is doing great losing weight or Maintaining!! I am happy that today is going to be Wk 3 Day 1 so then we do the add sugars and starches Then........ROUND 2 WOO HOO!!!

Maintenance HIGH PROTEIN = HIGH LOSS!!!!

I am so happy!!! Yesterday I go up 1.2 above LIW....so I had decided to do a High Protein with only one vegetable at each meal with out mixing so I could bring my weight down!!!

I had a very emotional day yesterday and I am so Happy to report I stuck not only to protocol but I also stuck to the specific plan for yesterday!! I did not do any emotionaly eating or drinking yesterday as I would have in the past!!! My reward for this I had a 2.7 pound loss Woo Hoo!! Also brought me to my lowest weight since being the program as well!!!

I was very happy and this just made me get my day going!!! I made the effort for a new venture and it even went very well!!

I am so thankful how this program has brought to my attention and the correction of what I have done wrong for so many years!!!!

Everything has gone well and I believe that tomorrow I am going to make the pumpkin layer cheesecake so expect pictures and the recipe to follow!! Yummy~0!!

How to Make your own Almond Flour!!

I had been searching for almond flour to make muffins and the Chocolate Coffee Mug Cake and had been having a hard time finding. So I reached out to fellow HCGer's and got this is a reply!

When I googled the only tip I found was make sure you dont end up with almond butter!!!

Jennifer Smith Lile shared her tips of how to successfully make your own Almond Flour and I wanted to share this with others that might live in rule areas and I would assume it is more cost effective this way as well!!

You can make your own:

I buy whole, raw almonds Put on a large sauce pan of water to boil. When the water is boiling dump in a manageable amount of almonds - I usually use half of the 12 oz bag at a time. Leave the almonds in for just one minute. You don't want them to cook or get soggy, just loosen their skins. After a minute dump them (or scoop them out if you're going to do more) into a strainer and run cold water over them to stop the cooking. Dump them out onto an old towel and blot dry. To slip off their skins just grasp them between thumb and forefinger, pointed end away from your palm, and squeeze. Have your other hand ready to catch because that little sucker will shoot out. When I've done an entire bag (which I usually boil during commercial breaks and pop out of their skins while watching TV) I lay them on a single layer on a sheet pan and pop them into a 350 degree oven for just about 3 minutes to make sure they're completely dry. When they're completely cooled (that's important), run them through a food processor. I actually use my coffee grinder because it gives me a much finer texture. When they're all ground I rub them through a colander, pluck out any chunks and process them again. You have to be careful not to turn them into butter. Store in a airtight container in the fridge for maximum freshness.

This sounds like a lot of hassle but the actual working time I put into it is about 1/2 hour.

Chocolate Mug Cake



4 TBLS of Almond Flour

4 TBLS Sugar Alternative

2 TBLS cocoa powder

1 Egg

3 TBLS Milk

3 TBLS oil (she used olive oil)

splash of Vanilla Extract

1 Large Coffee Mug



Mix all dry ingredients in mug

add egg and blend throughtly

Add Milk, Oil, and Vanilla mix

Place in 1000 watt micro for 3 minutes

(2 minutes in her 1250 Watt microwave)

Do not cover mug, cake will rise over top - do not be alarmed

Let Cool and place on plate add a little whipped cream on top.

Okay I have had my fun ........ Having new recipes and flavors but today I am going to do High Proteins!! I am at the top of my comfort level!!

This is what you learn by weighing on a daily basis! I jsut want to stay in check! Yes, my last two days have been treats but today I will be a little strict on myself!! I like how my maintenance is going and do not find any reason to rock the boat!!

In the past two days I had Pizza, yummy rosemary butter sauce, and even peanut butter!!! I believe that is enough treats and feel good about my choices!! Life is well and I can see how this is changing my overall health!! I am truly happy and loving life!! Enjoyed making new recipes, altering recipes and being creative.

Amazing Creamy Wine Sauce

I got this recipe from hCGMiracle facebook discussion page!! Thelma and Louise have voted it as one of there favorites. It was originally posted by Angie from the Taste of Home Magazine! Let me tell you this is absolute divine!!

I of course am going to post it the way I made it which was I halfed the recipe for just me and I added onions to it that I carmelized and I used portebella mushrooms!! I really wanted to take a spoon to eat every drop of the sauce much I showed much restraint and did not do it!!!

I fixed this with a Pork Loin Chop but would be great with Chicken as well!!!



1 boneless Pork Loin Chop or Boneless Skinless Chicken Breast
1 TBSP Butter
1/4 Cup Cooking Wine
1/4 Cup Whipping Cream
1 1/2 tsp Minced Rosemary
1/2 Cup Portebella Mushrooms
2 oz of White Onion, moon Slices
Salt and Pepper to taste

Spray pan with cooking spray. Cook your Pork or Chicken over medium heat. Remove and keep warm. Place onions in pan to carmelize once they are about half done go ahead and add your mushrooms, once brown remove onions and mushrooms. Deglaze your pan with the cooking wine and cook over medium-high heat, stirring to loosen the brown bits from pan. Add Cream and bring to boil. Reduce the heat and stir until slightly thickend. Add rosemary and butter until blended. Add onions, mushrooms and return meat to pan.

Well yesterday was kinda of a crazy day!!! I made a mistake when I thought I was below LIW by 1.4 I was really only .8 below LIW...( Dont try to figure without coffee first...LOL)....But yesterday I did not drink all of my water and I did splurge with the cheesy yummy Cauliflower Pizza so this am I am up to .5 above LIW.

That is ok though I am pretty stable staying within no more than 1lb either way!!! Today my goal is make sure I drink my WATER WATER WATER!!

I know how important it is to drink my water PLUS with the extra sodium in the Cheese and Tomato sauce I had I tried drinking lots last night but when you get behind in the day it is really hard to drink that much at night especially after eating!!

Today starts Week 2 of my maintenance and all is well!!!

Cauliflower Pizza today because 1.4 under LIW

Yesterday I did a test for Jayme Hunt http://www.lessofmehcg.blogspot.com/ Jayme has been testing different things to do on maintenance and life phases. Yesterday I tested the Apple/Cheese for her. I did not have as large of losses as others; however, I was very pleased with my results. I think some factors may have been that I am only at the end of my first week of maintenance. I had lost .2 lb the two days previous so to be on maintenance and have lost 1.0 lb I think it was a success.
 

Most of all I got to a place I felt I would try the Cauliflower Pizza!!! It was delicious; however, it is the richest food I have eaten since beginning this program back in Oct! It was easy to make and really enjoyed. I am going to repost this recipe taht I got from http://www.hcgloss.com/ and will note changes and suggestions. Ingredients for Pizza Crust:
 
1 cup cauliflower, cooked and riced (grated)
1 egg, beaten
1 cup of mozzarella cheese
1/2 tsp fennel
1 tsp oregano
2 tsp parsley
garlic powdet (to taste)
 
NOTE: I did not have any fennel or parsley at the house and all I did after making the crust before baking I sprinkled with oregano and garlic powder (I did not measure just eyed both). I also sprinkled a little dill on it. ALSO I KNOW FAMILIES THAT HAVE TRIPLED RECIPE TO FEED THE FAMILY!!
 
Do not pack ingredients in measuring cup. All you need to do is put the cheese, cauliflower, and one beaten egg into a small bowl mix well. I sprayed my non stick round cake pan and evenly patted it down.
 
Then place in preheated oven at 450 degrees for 12-15 minutes. After crust was done I turned oven down to 350 degrees to warm toppings and cook other toppings this takes longer but from others it also helps crust remain crisp.
 
This was not in the directions but after I baked it to keep a round shape I flipped out of round pan and then place right side up on a cookie sheet before adding the sauce and toppings. Keep in mind by letting rest some it allows some of the moisture out keep the crust crispier.
 
NOTE IF MAKING JUST BREAD STICKS AT THIS POINT YOU COULD SPRINKLE WITH PARMESEAN CHEESE AND BROIL TILL MELTED AND BROWN SLICE WITH PIZZA CUTTER AND SERVE. I think would be great with Chili, Soup, Salad, or just dip in Marinara Sauce.
 
For toppings this is what I did. Since I am new to Maintenance I did not want the premade sauces because of being high in carbs; therefore, this is what I did.
 

I took 1/4 cup of Hunts Tomato Sauce 100% Natural and put in a saucepan with minced garlic, pepper, and oragano and heated through.
 
So the veggies would cook since everything is precooked I did sautee my onions and peppers.
 
For my toppings I put the sauce on first then the sauteed onions, peppers, fresh mushroom sliced, some grilled chicken I had left from lunch, 8 slices of pepperoni.
 
I was gonna sprinkle with parmesan cheese but I did not add that and it was absolutely delicious without!

Since I posted a late posting last night not really anything new to report other than I was down .2 this am so I am now .4 below LIW. Everything is going good! I am being good to maintenance and it is being good to ME! =D

I did post before and after round one pictures today! yes I still have at least 2 more rounds to go, BUT how many other diets have you been excited to finish or extend? I have never before but with the Body and Mind changes I am really excited. I have seen this as a way for me to go into retirement from being a professional dieter!

Riding in the cruising lane on Maintenance

Maintenance is going well! I am sorry I posted so late today; however, took my last final today!! Yeah another term complete!!!

I took my measurements this am and have lost more inches! The most inches was were we would like to have keep them....I lost 2" in my bust this past week!! What??? ooo well!! Other than the bust I lost 1/2 inch in my left thigh so now my left and righ are the same size. I have also lost another 1/2 inch in my waist.

So while doing my maintenance, inches are still losing YEAH!!

I made an amazing salsa tonight with my chicken! I so wanted guacamole but I just did like a salsa with avocado in it, and it turned out amazing!!!!

In my Ninja I put 2oz of red onion, 1 tomato quatered, 3 cloves of garlic, 15 cilantro leaves, 4 dashes of tabasco sauce, juice of 1/2 lime, and 1/4 of a Haas Avocado 1/2 tsp of salt....pulse to desired consistancy....I put this over my grilled chicken tonight....My little mexican dinner!!! Was so yummy!!!

Wheeeeee.......arms above my head as I fall down this rollercoaster

Woo Hoo what a ride but last night I must have put my arms above my head on this ride; because I woke up this am and down -1.8; therefore, I am at +.02 above LIW!!!!

I am a huge vegetable eater so instead of Salads with mixed veggies I focused on high protein portions and only at 1 veggie per meal yesterday!! I consumed about the same number as calories as the previous day; however, large protein portions made up the majority of the calories and I forced extra water down even though it was cooler!!!!

I know you can look at my journal to see what I ate but you would have to go back to the date so I just wanted to share that way it would be easier for you:

For Breakfast I had 1/2 grapefruit, one boiled egg, and 3 strips of turkey bacon


Lunch I had 4 oz of Talipia (after cook weight) on George Foreman and 3 cups of baby spinach wilted in ACV

Snack: 1 oz of Almonds

Dinner: 5 oz of Chicken breast (after cook weight) on George Foreman and sauteed 2 cups of green cabbage in water & ACV

Dessert: Apple with cinnamon and 1/2 packet of Stevia sprinkled over it and Baked


So we are off to another day and I am supper excited!! and Really ready to get back to round 2!!!

I think I am going to have one salad today and make sure just one veggie tonight!! still learning how to walk on this path!!! Taking my baby steps all over again but it is not how fast I get to the road it is that I do it successful!!!

Wow the Maintenance coaster continues...Go from -2 to -.4 to +1.8 of LIW....everyone says this happens but when it is you all you can say is WOW!!

I thought I was doing so well by eating lots of veggies yesterday and a great Salad for lunch and at Dinner fixed Vegetable Soup with Beef Tips in it!! Well beef is not always my best friend but +1.8 Holy Toledo!!

Still struggling with the calories and dont think I drank all the water I needed yesterday plus did not sleep well last night!!! However today started a new day and I ate lots of Protein and only ate one vegetable with each meal and did not mix today!! I will post in the am to let everyone know how it went today!! I really think I did well with the choices of food but I struggled with water again today! It has been really cool here and I would have rather drank coffee or hot tea today but I know how important the water is so I am sitting here with my water bottle!!!

The Maintenance Highway....might be a rollercoaster

Well I made it through 1st Official Maintenance day; however, I am on the Maintenance rollercoaster...back up this am!! but still below my LIW!!!

I went to a site to see how many calories I need to eat to maintain my weight....and it said 1837....WHAT??
Well I knew there was no way with my stomach shrinking I could eat this many calories, so I just tried to do the best I could and after each meal I was feeling too full! and after lunch for my much desired fresh green beans sauteed in Olive oil with slivered almonds was no way near what I had remembered them being pre HCG....I think I put too much Olive Oil in the pan!!! And with the oil I just felt YUCKY!!! Maybe should have done for dinner since I did eggs and turkey bacon at breakfast.....not sure just strolling down this road trying to remember all of the caution signs my friends have posted on their journey and embracing the new trail.....

So with all this said, I only ended up with 1000 calories!!! Today my goal is to eat small meals and do the best I can but I do not want to feel full as I did all day yesterday!! Plus I drank my 3 liters of water!! and that is filling as well!!!

Last night for supper I had a piece of fish on the George Foreman grill and a large salad!! It was soooo good to mix my veggies and the salad was fabulous!!! I am thinking that is going to be lunch today but I know I need protein maybe not this meal!!

This am I started out with just 1 egg (boiled) and still had my turkey bacon.....then mid morning to try to increase my protein I did 4oz of small curd cottage cheese with blueberries.....Now I really miss my yogurt so I am experimenting with how to use the cottage cheese to give me something along this line....This am I put the cottage cheese in the NINJA with 1/2 packet of stevia then added 1/2 cup of blueberries...it tasted good but it was Burple color..lol....and it was a little thicker than the yogurt!! As I get this to the right consistancy and flavor I will post and share!!!!

Today is overcast and raining...so I am thinking for dinner I might make vegetable soup!! Unsure rigth now and I will study for one of my finals and maybe take it tonight...since with the weather  is an inside day!! I am having electrical problems at the house so that means none of the tvs or cable is working!! Very quiet in my home today!! better take advantage and study!!

Official Day one of Maintenance!!!

Well got up this am and hit my personal weight goal I wanted to get to this round and I am super happy; however this already puts me 1.4 below my LIW!! I will have to embrace this part of the journey as we venture into a new path!! I was very comfortable with Phase 2, yesterday when I went to the store to buy some new foods I can have it was really hard....really the only thing I got was a few more varieties of veggies since I can mix them now!! and the two things I have really been wanting was my turkey bacon and some fresh green beans. I had the turkey bacon this am!! and plan on the green beans at lunch sauted in 1 TBSP of olive oil and minced garlic garnished with almond silvers.....I also purchased some whole alomonds to have for a snack food.

Last night I was really hunger so I did go ahead and increased my supper portion of meat and I ate till full but was really full!!! I had a burger that I put on the George Foreman grill with a tsp of coarse ground mustard on top and a sliced tomato...really enjoyed my burger without the bun!! But I have ate them like that for a long time or I would actually us lettuce on the top and bottom for bun effect!! You can do this....it mainly comes to about the food choices we make!!! I am so happy with my choices and my journey at this time and feel that I am retiring from being a professional dieter!!!

End of Round 1 Moving onto Maintenance!

Sorry I have not posted much this last week! I am in the process of taking Finals for my term in school, so been kinda crazo!!

Sunday December 6, 2009 was my last injection for this round....I missed my personal goal for this round by 1.4lbs but the 2lb rule would put me below so maybe I will get there. I will begin round 2 Jan 23 and Jan 24!!

So with 35 injections and 4 days of detox I lost 30.2lbs and 24 inches!!! Woo Hoo

I am sort of nervous about going to Maintenance; however, it is part of the journey. Therefore I will travel down this road slow and easy!!!

PATIENCE IS A VIRTUE!!

Well after yesterday I was thinking today would be my last injection at 30 instead of 40!!! I was so discouraged with last week starting the stalls and then this week I loss on Sun and Mon am then stayed the same till Friday day after Thanksgiving had a -1/2# but then was back up 1/2# Sat...Ugghhh...was really wondering if I needed to stop..and go into maintenance will after talking to several of my Mentors they reminded me what I knew that the scales were not moving but the tape measure would be....so I got up this am and was anxious to do my measurements and see what the scales had to say!! Had a 1.2 lb loss and hit new numbers...... Well it might have been only a 3.2 lb loss for the week but 8 1/2 inches have melted away!!! Woo Hoo!!!

Water

1 TBSP Tabasco Course Ground Mustard

2 gloves of garlic minced

2 TBSP of Organic Beef or Chicken Broth


Pepper to taste

1 tsp Onion Powder

1 tsp Garlic Powder

In one small skillet put 100 grams of chicken in saute pan with 2 TBSP of Braggs Liquid Aminos, Black Pepper, onion powder, and garlic powder cook chicken until done, adding water to deglaze pan and keep chicken moist.

While chicken is cooking take another large pan
( I use a 8"  pan with high sides so the cabbage leaves lay open and will not tear) add water bring

to a boil....add Cabbage leaves one at a time just to cook until cabbage leaf is tender and plyable. (I also remove the hard veins of larger leafs). As they are done take out set to side.

Once the chicken is completely cooked remove chicken from the pan let cool and cut up...keep the juice from cooking chicken add the minced garlic 1 TBSP of mustard and about 2 TBSP of organic beef  or chicken broth ( I had beef opened and used it) bring to boil and cook your apples in this mixture once the apples start cooking down and tender return the chopped chicken to the apples.

Take your large steamed cabbage leafs and spoon in the mixture and roll into wraps... This was so satisfying it was sweet and spicy and very filling...

Marinade for Vegetables

1 1/2 Tablespoon of Braggs Liquid Aminos


1 Tablespoon of Braggs Apple Cider Vinegar

1 Tablespoon of fresh squeezed Lemon Juice

Black Pepper to taste

Whisk all ingredients together and pour of vegetables in Ziplock bag...let marinate about 30 minutes to 1 hour in Refrig....

Place Vegetables on George Foreman Grill...pour over excess and grill...

I used on Aspargus for Phase 2 but I am sure it would be very tasty on Zucchini for you phase 3 folks

Week 5 Weigh In

Sorry to be posting late Hubby was home and tried spending time with him!!...It was great on the first day he was home...he looked at me and said, "it looks like somebody has moved out of the ass of your shorts" It feels good when people notice we are losing weight!!!  We had a quiet Thanksgiving went and did a little shopping it was nice got Friday prices without the Friday MADNESS!!

My favorite purchase was a George Foreman Grill and some other kitchen gadgets since I seem to spend a lot of my time there now....Sad, since my Hubby is the one the chef!! LOL...

Ok on to Week 5 I have been going through some plateaus but still ended with a good week!! Lost a total of 4 lbs, therefore that brought me to a Grand total on HCG to 21 pound with 25 injections!!

My plateau seems to be carrying on this week....stayed the same for 3 days, I did get up this am to a 1/2 lb lose. Which is GREAT for the day after Thanksgiving!!

So my journey continues.....

Chicken Chili


100 grams chicken breast


1 Cup chopped tomatoes (I removed the skin)

1 1/2 Cup of Water

1 TBSP Apple Cider Vinegar

Onion powder to taste

3 cloves of garlic, minced

1 Tsp Garlic powder

2 Tsp of Chili powder (or to taste) DIVIDED

2 Large Dashes of Hot Sauce DIVIDED

Dash of Cayenne Pepper

Salt and Pepper to taste.

In one saucepan put 1 cup of water, 1 TBSP of Chili powder, 1 tsp of Garlic powder, Large dash of hot sauce, Salt and pepper bring to boil and add chicken. Once chicken is done take out to cool and shred.

In another saucepan, I use the smallest on I have put in 1 cup of tomatoes, 1 TBSP Apple Cider Vinegar, onion powder, minced garlic, 1 TBSP of Chili powder, large dash of hot sauce, and salt and pepper to taste, bring to a boil to cook tomatoes down. You might need to add more seasoning to taste or water to get to the consistency you desire one the tomatoes are cooked down add the shredded chicken and let simmer.

This had lots of flavor and I really enjoyed the sauce it even thickened some and was dark brown like chili sauce would be~

Served with a Grissini Bread stick.

Orange Ginger Chicken


100 grams of chicken

2 cups Cabbage cut in strips

1/4 cup of chicken broth

1/2 lemon juice

1 orange, peeled and squeeze the juice and add the pulp to sauce

1/2 tsp for fresh ginger, slivered or grated

4 TBSP of Bragg's Liquid Aminos

Salt, Pepper to taste

In a small bowl add all the ingredients except the chicken and cabbage and whisk together. Place in a small frying pan and add chicken. Cook chicken until done remove chicken and add the cabbage with about 1/4 cup of water. Cook cabbage add back chicken until Cabbage to desired tenderness. I had my cabbage cut long almost reminded me of lo mein.

Very good flavors!!

Plateau

Well I hit it!!! From November 19 - November 22 was at a plateau. Even though I knew it would happen it still is hard to face! I stuck it out did not do an apple day!! I dont know if it was just patiently waiting, all the water I drank yesterday or the Detox bath I did last night.............. But this am I am proud do report down a pound!! Woo Hoo....

I had an amazing week last week; therefore the plateau could have been my body just catching up with what I had already lost. Other reasons to hit plateaus include approximately at the 1/2 way point of your round as well as returning to a weight you were previously at for some time.

Guess what I was at all of the above: had just had a great week before, Days 22-25 of my shots, plus at a weight I maintained for some time.

Not to say it was easy because after the great week last week and close to new numbers I was really hoping this week would have broken through, but that is not going to happen but as long as this ball keeps rolling I will hit new numbers maybe by Thanksgiving Day!! That would be something Great to be thankful for!!

Well I have completed half of my first round with 20 injections! I knew that going to the Dr today was going to be good with my measurements because I had been able to wear some clothes out of the closet that I could not wear; however, the measurements were GREAT!!!!

So according, to Dr scales down 17.6lbs!!

Measurements:

Bust down 1"
Waist down 5" ......... Can we say WOO HOO!!
Abdomen down 3.5"
Hips down 3"
Thigh down 1"

Grand total........... Down 13 INCHES

Closet Shopping

Woo Hoo....another day being a loser!! Down another 1.2lbs this am This brings me to at total loss of 18lbs on HCG under Dr supervision. I am still waiting for mh HCG I ordered online so I can increase to the 6 shots per week vs. the 5 I have been doing!!

Today was a great day when I was able to go to my closet and put on a pair of shorts I could not wear a month ago at all...and they are loose tabo!!! and a Shirt that I bougtht in April never wore much because the sleeves were too tight!! Guess what not to tight today! =D

Well tomorrow I will go to the Dr office to get what I hope will be my last 5 shots from them because my order should be here this week! and will be measurement day!! Cant wait to see what it is because I now it is going to be GREAT!!!!

Also I have learned so much with this journey, you really can even eat limited foods and make them exciting! I am enjoying posting recipes and ideas that I have found, becaues variety is so hard! Also planning ahead is a key to any success and that is with your lifestyle changes as well. You just have to think outside the box!! Also remember when shopping at the store the outside perimeter is your friend and the inside isles are your down falls.....

Stawberry Vinaigrette on Baby Spinach



10 Medium Strawberries
1 TBSP Apple Cider Vinegar
1 TBSP Lemon Juice
Dash of Garlic powder
Pinch of Sea Salt
Fresh ground pepper to taste
Pinch of Stevia to taste

Take 7 of the strawberries and quarter them. Place the Stawberries in food processor (I use the small container of my NINJA). Then add all other spices and blend till smooth. Take your additional 3 Strawberries and slice to garnish and mix on Baby Spinach or Mix them in with the cucumbers.

When I make this I place in a small container in refrigerator to let the flavors blend. Then I mixed on 2 Cups of  Baby Spinach.

I have also used this same Vinaigrette on Cucumbers. When doing that I went ahead and mixed cucumbers, and strawberries then tossed in Vinaigrette and refrigerated together!

Chili ~ Phase 2


100 grams of lean ground meat
1 Cup chopped tomatoes (I removed the skin)
1/2 Cup of Water
Onion powder to taste
3 cloves of garlic, minced
1 Tsp of Chili powder (or to taste)
Dash of Cayenne Pepper
Salt and Pepper to taste.

I had browned some ground meat earlier in the week with spices such as chili powder, red pepper flakes, black pepper and had put in refrigerator. So tonight I just made my soup once cooking added the meat to warm and flavors marry.

Put your 1 Cup of tomatoes and water with all spices in a small boiler pan (if making just one serving I use the pan like you would boil water to make tea in) bring to a boil. Once this got to a boil I turned to lower heat so the liquid would not cook out! Once I turned to simmer I added the hamburger meat.

This had lots of flavor and I really enjoyed teh sauce even thickened some and was dark brown like chili sauce would be~

Served with a Grissini Bread stick.

Orange Coleslaw


1 Cup of Green Cabbage
1 Cup of Red Cabbage
1 Medium Sized Orange
1/4 Cup Apple Cider Vinegar
2 TBSP Bragg's Liquid Aminos
1 TBSP Lemon Juice
1/4 teaspoon of onion powder (or to taste)
2 cloves of garlic, minced
Stevia to taste
Salt and Pepper to taste

Chop or shred Cabbage to slaw consistency. Peel orange and segment. I keep about 4 segments whole to add chuncks to slaw use the remaining segments and squeeze the juice from them you can add the pulp to the dressing if you wish, I did. Then mix all remaining spices and in a bowl with organge juice, whisk well. Put your cabbage in bowl pour sauce over and toss well. Then place in the refrigerator go marinate well.

I sauted my chicken and put chunck of chicken on my plate.

Complete Lifestyle Changes

Was really excited this am under following the new protocol the scales are going in the right direction. This morning I was down 1.4 lbs which took care of my .4 gain from yesterday PLUS lost one more...Woo Hoo!! Following the original protocol is so much better I cant wait to get my HCG in where I can completly follow by having 6 injections in a week!!! I was writing to a fellow HCGer this am to give them some encouragement and this is part of what came out to them....and I am glad to see I have finally made this realization myself and can express it!

"This is really a great journery with a new lifestyle I can live with one step (one pound) at a time! It might also mean that I am getting old...LOL and ready to change the aspects of my life that I can change because I have spent too much time trying to change the things I couldn't!"

I am so glad that this diet is not only changing my healthier eating habits but bringing to a completely new lifestyle in all aspects of my life!

So with this said this brings my total weight loss to 19.6lb in 28 days, 24 of these days are using the HCG with a total of 14.6lbs, But want to share since changing diet to "ORIGINAL" Protocol in 5 days 5.4 lbs!!!

"Original" Protocol Menu Plan ~ The Plan I am following now



BREAKFAST:
  • Tea or coffee in any quantity without sugar.
  • Only one tablespoonful of millk allowed in 24 hours. Liquid Stevia may be used instead several flavors available (Vanilla Creme, English Toffee, Chocolate Raspberry and more).
LUNCH:
  • 100 GRAMS OF MEAT all visible fat must be carefully removed before cooking and meat must be weighed raw. It must be boiled or grilled without additional fat.
    • Veal
    • Beef
      • Steak lean
      • 95% lean ground beef
      • Beef, Roast
    • Buffalo
    • Chicken breast (MUST BE REMOVED FROM THE BIRD)
    • Fresh white fish
    • Lobster
    • Crab
    • Shrimp
    • SALMON, EEL, TUNA, HERRING, DRIED OR PICKLED FISH ARE NOT ALLOWED.
  • VEGETABLES ONE type only to be chosen from the following per meal NO MIXING:
    • Lettuces of any kind 2 cups
    • Spinach (baby) 3 cups
    • Asparagus 2 cups
    • Cabbage
    • Tomatoes
      • Cherry 1 cup
      • medium 1
    • Cucumbers 2 cups
    • Chard 2 cups
    • Onions (White, Yellow or Red) 1 Cup
    • Beet Greens 2 Cups
    • Red Radishes 2 Cups
    • Celery 2 Cups
    • Fennel 1 1/2 Cups
    • Chicory greens 1 Cups
  • FRUITS only 1
    • Medium sized Apple
    • Medium sized Orange
    • 1/2 Medium sized Grapefruit
    • Handful of Strawberries 10 med 1 to 1 1/4in
  • CARB (ONE - OPTIONAL)
    • Grissini Breadstick (1 stick)
    • Melba Toast
      • 1 rectangle
      • 2 rounds
DINNER:
  • The same four choices as lunch.
If hungry you can split your meals into smaller meals, ie have your fruit for breakfast with melba toast. Have your Dinner fruit as a snack in afternoon or later in evening best not to eat after 7pm with Dinner or snack. Another easy rule don't eat anything 3 hours before going to bed.

SEASONING:

The juice of one lemon daily is allowed for all purposes. Salt, pepper, vinegar, mustard powder, garlic, sweet basil, parsley, thyme, marjoram, etc. may be used for seasoning, but NO OIL, BUTTER, OR DRESSING in this phase.

BEVERAGES:

WATER: should consume 2 to 3 liters per day (one rule of thumb is take your wieght dived by 2 and you should consume at least that many ounces of water per day. Example: 200 lbs divided by 2 = 100 ounces of water per day).

Tea, coffee, plain water, mineral water are teh only drinks allowed, but they may be taken in any quantity and at all times.

Balsamic Spinach and Chicken


Please forgive me for not having exact measurements.

100 grams of chicken breast
Mrs. Dash to taste
Sea Salt to taste
Black Pepper to taste

Cook Chicken with above seasonings I spray my pan with a quick spray Pam Olive Oil. After searing each side with seasonings then I add water to the pan to assist in cooking chicken without drying it out. Once Chicken is done set to the side.

2 Cups of Baby Spinach with stems removed
2 cloves of garlic, minced
2 TBSP of Chicken Broth
3 TBSP of Balsamic Vinegar
2 to 3 TBSP of Water (depending how much you want to cut the Balsamic Vinegar I like the kick of it.)

First I left the juice from cooking my chicken in the skillet added the broth garlic to saute garlic.  Then added the Balsamic Vinegar and water. Once it cooked down some and garlic tender I added the baby spinach and quick saute to the tenderence you prefer.

** Keep in Mind Spinach will cook fast!

Then I placed the spinach with garlic and small amount of liquid on my plate then I placed cut up chicken on top and added my Melba Toast to help soak up the small amount of liquid.

Week 3 Weigh In

Woo Hoo.....Love changing over to the new protocol. Yesterday I followed it to a T even though I still do not have the HCG I ordered to up to 6 injections per week! I was kind of concerned because yesterday I was tired and sluggish feeling; however, when I got on the skills this am "HAPPY DANCE" biggest one day loss so far down 1.8lbs.

When I went to the Dr this am I lost 5.2 lbs this week! This brings me to a grand total of 13.6 pounds on HCG injections in 21 days!! I am enjoying my journey one step (one pound) at a time. My blood pressure was great 115/72, even with a stressful phone call on the way to the Dr..LOL!!

Note on changing protocol

Well as I am making the progression of changing to the original protocol my weight loss has picked up. Since I only get 5 shots from the Dr until the HCG comes in I have not completly converted to the 500 calories, but the changes I have made My losses have picked up ;-D. The last three days 2.6 lbs this brings me to a total of 11.8lbs in 21 days on HCG program and a grand total of 16.8 in 25 days!! Woo Hoo!!! I have a long way to go to get to my goal wieght; however, it is one pound at a time with one step at a time in this journey.

Changing Protocol

Well after further research and my friends and supports I have meet through the facebook page YourHCG, I have gone ahead and ordered my HCG injections online to follow the "Original" protocol by Dr. Simeons, M.D. I will continue on the Doctor supervised program I have been following until my HCG arrives which can take up to 2 weeks. I have started altering some of the choices that my doctor is providing me know because on the original protocol you reduce to 500 Calories a day. I will not longer have my Diary or Carbs on the original protocol, and will get one more injection per week.

The "original" protocol has been tested and researched for many of years and after seeing how others are losing weight a little faster than my Dr protocol, I am making the change as well.

"CHANGESRGOOD" and moving forward to a skinner me!!

Week 2 Weigh In

Ok followed up at the Dr this am, to report a total of 9.2 lbs (14 days Dr. supervised)lost with 3 inches Lost 1 inch in my waist, 1 inch in my hips and 1 inch in my thigh. This is a total of 14.2 lbs in 19 days!

My triglycerides are back to the normal range; however my cholesterol is still on the high side. Hoping that this gets back in control with diet!

It is time for me to go prepare my lunch just wanted to make a quick note of the reportings this am!!!

We are taking the Journey one step at a time!!!

Cheesy Asparagus Pasta


1 Cup of Asparagus

1/2 Cup Baby Portobella Mushrooms

1/2 Cup Whole Wheat Pasta

2 1/2 oz Fat Free Mozzarella Cheese, Shredded

Garlic powder to taste

Mrs Dash to taste

Cook Pasta to desired tenderness.

Saute the Asparagus and mushrooms together with the Mrs Dash and garlic powder for seasoning. Combine Asparagus with the pasta in a shallow dinner bowl, stir in cheese to melt.

Enjoy

Lunch: 1 Vegetable, 1 Complex Carb, 1 Dairy

Chicken Veggie Rice Soup

I took an HCG recipe for Chicken and Asparagus Soup and did an alteration. I am under a different protocol than the "Original Dr. S protocol" therefore I have a few things available like mixing vegetables and at lunch I get a Carb so I added my rice. (I had at lunch and only used 1 oz of cooked chicken so I could have Protein at night, PLUS it was a left over portion so it was already cooked to help make it easy for a lunch menu).

1 Cup of Fat Free No Sodium Chicken Broth

1 Cup of Asparagus

1/2 Cup Baby Spinach

Garlic powder to taste

Mrs Dash to taste

1 oz of Cooked chicken, shredded

1/2 cup of cooked brown rice

In a saucepan place your chicken broth with spices for seasoning and bring to boil. Once to a boil add the asparagus and cook to tendercrisp. At that time you will add the baby spinach, chicken, and rice all you are doing at this point is to soften the spinach to desired texture and warming the chicken and rice.

Enjoy ~ This was quick from leftovers and tasty!

Lunch: 1 Vegetable, 1 Carb with 1 oz of Protein. For my lunch diary I drank milk.

Chicken and Zucchini with pasta

4.5 oz of chicken cooked
1 Cup of Zesty Zucchini (previously posted)
1/2 Cup of Whole Wheat Spiral Pasta
2 TBSP Fat Free Zesty Italian Dressing
Mrs Dash
Garlic Powder
Black Pepper

Took my chicken breast and sliced into thin long strips to cook fast seasoned with the Mrs Dash, Pepper and Garlic powder. Added a small amount of water as finished cooking to keep moist. Then remove and set aside.

While Chicken was cooking; make pasta.

In the same skillet that I cooked my chicken, I put the Zucchini that had marinated in the balsamic vinegar and garlic in fan and cooked till tender crisp. Removed the sections from pan and cut into bite size chunks.

After cooking pasta and drained return to pan and combine your chicken, pasta, and zucchini and toss with the Fat Free Zesty Italian Dressing and enjoy!

Serving: 1 Vegetable, 1 Protein, and 1 Complex Carb.

Will post a picture next time I make!

Zesty Zucchini

1 Zucchini, I cut into halve then 1/4 to make wedges.
3 cloves of fresh garlic, minced

Balsamic Vinegar

I put the zucchini and garlic into ziplock bag pour over enough vinegar to cover in bag, remove air from bag and refrigerate at least an hour.

Great on Grill, George Foreman, broiler pan in the over or sauteed in pan on stove!

Serving: 1 Cup for Vegetable

More recipes to come

I have really enjoyed posting and coming up with recipes! I am going to add additional recipes; however I don't have pictures for all. I am going to post them and will add pictures as I can take them. Please keep in mind that there are different protocals for the HCG and I try to specify everything for the plan I am on, just make alterations for your protocol.

I am enjoyed being creative and altering recipes to make a better choice!

French Onion Soup


2 oz of Filet Migon or London Broil (I had some that was grilled to med rare left over from the other night because more meat than I am allowed)


2 Cups of Water


pinch of sea salt (to taste)


garlic powder


Mrs. Dash


1 Cup of Sliced Onion


1/2 Cup of sliced Mushrooms (can omit if you dont like)


2 Dashes of Woresterchire when sautee onions


I sliced the filet and added to water to make beef broth boiled on high while I sauteed the onions in another skillet after cooking some I added the worsterchire and some water then added the mushrooms. After sauteed I added to the broth and did final tweeks on seasoning to taste.


To complete I took a 1/2 English Muffin topped with 1 1/4 oz of Fat Free Mozzarella and broiled to melt and brown cheese. This is perfect to asborb the juice and yummy melted cheese!

1 Dairy ( I had 2oz of skim milk as well)

1 Complex Carb

Week 1 Weigh In

Ok....I went to the Dr this am after week 1 Lost 5 lbs, it is going a little slower than last time but I will take it, that is a total of 10 lbs less of me in 12 days total! Woo Hoo!!!!!! I started doing a lower calorie diet a few days before going to get my shots because I still had my diet plan from when I was going before. We are making progress and changing to a healthier lifestyle one day at a time. Even though with this plan you have great results it did not get here overnight nor will leave that way.

Did not get my blood work results because the Dr was out of the office, next week will have them and do measurements they do measurements every two weeks, but I can tell a difference in some of my clothes and my face! =-)

Eggplant Parm


Preheat Oven to 350.


1 1/2 Cup Eggplant 1/4 slices


2 1/2 oz Fat Free Mozzarela cheese, Shredded


6 slices Melba toast or 1/2 Cup Fat Free crouton or 1/2 Cup Corn Flakes made into crumbs.


1 Egg, beaten


1/4 Cup Fat Free pasta sauce ( I use Ragu tomato and basil)


Seasoning to taste i added inot my egg (oregeno, Mrs Dash, black pepper)


Dip eggplant (both sides) in egg then crumbs, place on non stick pan


Cover eggplant with sauce ( I spooned on little bit to cover each one)


Top with cheese


Bake 15 to 20 minutes to make sure cheese is melted and eggplant tender.


Enjoy! This is a great lunch as all the food groups you need.

Italian Chicken with Pasta




Cut chicken to equal 4.5 oz (cooked) in bite size peices. (set aside).



In pan saute with oregano and Mrs Dash to taste Red, Orange, Green bell pepper and onion about 1/2 cup total when cooked equals about 1/4 Cup.



Then at end add fresh minced garlic. Set to side.



Saute chicken in same pan, then add veggies back with 1/4 cup of Ragu Lite Sauce (tomato, basil) and stir in 1/2 cup whole wheat pasta. Sometimes I add a small amount of water to help mix better.


Serve with 3/4 cup of steamed green beans and you have a complete meal!

1 Complex Carbohydrates

Cabbage Stew


Chicken 4.5oz after cooked (I have used turkey cut into bite size chucks as well)

1 Cup of shredded Cabbage

1/2 Cup of Tomatoes chunked or cherry tomatoes halved

1 Cup of Water

2 Tablespoons of Applecider Vinegar

minced garlic

chopped onion

dash of cheyenne pepper

sea salt to taste.


Make the broth with Water, Applecider vinegar, garlic, onion, cheyenne pepper, sea salt and tomatoes. While coming together saute chicken then add to broth. Then I give the cabbage a quick saute until tender and add to broth and chicken to all blend together.


Makes 1 serving to equal 1 Protein, 1 Vegetable.
To have for a Dinner you would have to add a complex carbohydrate, have not tried but could add 1/2 cup brown rice or whole wheat pasta , or Melba Toast for complete meal.

Alterations: I have fixed without the chicken at lunch and had melba toast with it! Then it is 1 Vegetable and 1 Complex Carb if you have the melba toast.

Introduction

Well last year in July 2008 I tried this diet and with thing way beyond my control, everything from some financial reasons to having back surgery in Decemeber, I am totally committed to making this a successful journey.

I went back on my diet Oct 17, 2009 unfortunately this was the highest weight I had been. I returned to Transformations and began on my shots October 21, 2009. I have been able to do well with the very low calorie diet and injections. I do not think my first week is as well as last time, but I have lost everyday. I will post my weightloss and inches weekly as I return to the doctor.

I have even tried to start a walking program. Since my back surgery exercise has been very little the last year. I walked this past week in my hilly subdivision and made it 1 3/4 mile in 30 minutes.

I am really motivated and want to share my journey to motivate others!
